Ingredients

Method

1.Place couscous in a small heatproof bowl; stir in 3/4 cup boiling water. Cover with plastic food wrap; set aside for 5 minutes or until liquid is absorbed. Add coriander; fluff with a fork to separate grains.
2.Heat a wok over high heat. Add oil; swirl to coat base and sides. Stir-fry lamb for 1-2 minutes or until browned. Add onion and zucchini; stir-fry for 1-2 minutes or until just tender.
3.Add spices, couscous and salt; stir-fry for 1 minute or until hot. Remove from heat.
4.Combine yoghurt and garlic in a bowl. Spoon couscous into serving bowls; top with yogurt mixture. Serve at once.

You can use cold, cooked, long-grain white rice instead of couscous. You will need 3/4 cup cooked rice. Don’t have a wok? You can use a large frying pan.
