Method
1.Boil kettle. Place couscous in bowl with butler, salt and pepper. Pour over boiling water, cover with cling wrap and set aside for 3 minutes until liquid has been absorbed
2.Remove cling wrap and fluff couscous with fork. Add kofta pieces, pistachios, mint, green onion and optional chilli. Toss together.
3.Place in container and serve hot or cold with tzatziki.
