Method

1.Preheat oven to moderate, 180°C. Lightly grease two 8 x 26cm bar pans. Cover bases and sides with prosciutto, allowing it to overhang.
2.Heat oil in a small frying pan on medium. Saute onion and garlic 3-4 minutes, until tender. Allow to cool.
3.In a large bowl, combine mince with onion mixture, breadcrumbs, tomatoes, parmesan, egg, nuts and sage. Season to taste.
4.Spoon mixture evenly between pans, folding prosciutto ends over. Bake 35-40 minutes, until cooked through.
5.Drain juices from pan; remove meatloaves. Serve sliced with salad leaves, chutney and bread.
