1.In a saucepan, heat the olive oil over medium heat.
2.Drain excess liquid from tomatoes and add, along with the garlic and tomato paste.
3.Cook sauce for 30 minutes, without a lid, stirring from time to time.
4.Pass the sauce through a mouli (food mill) or thick sieve into a clean saucepan.
5.Return to the stove, add the oregano and season to taste with salt and pepper.
6.Simmer the sauce, uncovered, for 10 minutes, then cool completely.
The sauce must be very thick and rich.
