Method
1.Cook noodles in a large saucepan of boiling salted water for 3-5 minutes, following packet instructions. Drain well.
2.Transfer noodles to a large bowl with salmon, avocado and ponzu. Toss gently to coat. Serve topped with coriander leaves and salmon roe pearls. Accompany with time wedges.
Try this with wasabi paste and sliced pickled ginger added. Make your own noodle sauce by combining 1/3 cup mirin. 2 tablespoons soy sauce. 2 tablespoons lime juice. 1 tablespoon pickled ginger and 1 teaspoon sesame oil.
