Ingredients

Method

1.Preheat oven to moderate, 180°C.
2.In a large jug, dissolve the stock cube in boiling water. Whisk in the honey and mustard.
3.Heat half the oil in a large frying pan on medium. Saute onion for 2-3 minutes, until golden. Transfer to a baking dish.
4.Sear ribs in the same frying pan on high for 2-3 minutes on each side. Transfer to the baking dish with the onion. Scatter apple around the pork. Pour over stock mixture and turn to coat.
5.Bake for 40-45 minutes, basting occasionally, until the pork is cooked through and the apple is tender.
6.In a jug, whisk together the remaining oil and vinegar. Season to taste. Drizzle over the lettuce wedges. Serve ribs with lettuce salad.

Try adding crispy bacon, halved cherry tomatoes and chopped egg to the salad.
