Method

1.Preheat oven to hot, 200°C. Line an oven tray with baking paper. In a bowl, place 4 x 125g blue eye trevalla (or ling) fish fillets with olive oil. Season to taste and toss well. In a small bowl, combine breadcrumbs, dill, parsley, basil, and lemon zest. Season to taste.
2.Heat a frying pan on high. Cook fish, skin-side down, 3-4 minutes until golden. Transfer to the tray, skin-side down. Press crumb mixture firmly onto fish. Bake 8-10 minutes until topping is golden and fish is just cooked through. Serve with roasted tomatoes and beans.
