Hearty chowder

Warming and hearty chowder packed full with bacon, smoked cod, prawns and fresh vegetables. Creamy, thick and incredibly warming - the perfect chowder for those colder nights.

Ingredients

Method

1.In a large saucepan, heat oil on high. Saute bacon, celery, carrot and onion 2-3 minutes, until onion is tender.
2.Add potato and cook, stirring, 1 minute. Mix in water and bay leaf. Season to taste. Bring to the boil, reduce heat to low and simmer, covered, 10 minutes. Remove bay leaf.
3.In a jug, blend flour with a little of the milk to form a smooth paste. Blend into pan with remaining milk, stirring constantly, until sauce boils and thickens.
4.Add corn, cod and prawns. Season to taste. Simmer 4-5 minutes. Top with parsley. Serve with baked tortilla strips.
