Method

1.Break noodles into a heatproof bowl. Add flavour sachets (from noodle packet). Cover with boiling water, then stand for 2 minutes or until noodles are soft. Drain well; return to bowl. Cool. Whisk milk, egg and flour in a bowl until smooth. Add egg mixture, ham and mozzarella to noodles; mix well.
2.Heat half the oil in a non-stick frying pan over moderately high heat. Cook 1/4-cup measures of noodle mixture, in batches, flattening slightly, for 1 minute each side or until browned and cooked. Use up the remaining oil between batches.
3.Combine tomato and cucumber. Serve noodle cakes topped with tomato mixture.

Make noodle cakes just before serving. For a stronger cheese flavour, replace half the mozzarella with cheddar or parmesan. Use cooked bacon instead of ham.
