1.Preheat char-grill pan on high. Line an oven tray with baking paper.
2.Lightly brush zucchini with half oil. Sprinkle with oregano. Char-grill 1-2 minutes, each side, until lightly charred. Set aside.
3.Brush bread with remaining oil. Char-grill 2-3 minutes each side, until golden and marked.
4.Spread bread slices evenly with tapenade. Transfer to tray. Top evenly with zucchini and mozzarella.
5.Grill toasts under a hot grill 4-5 minutes, until cheese melts. Top with sliced capsicum and basil leaves.
Buffalo mozzarella is a fresh soft white cheese with a mild, milky flavour. It is available from most large supermarkets and delicatessens. It can be replaced with bocconcini in this recipe, if preferred.
Note
