Method
1.Spray both sides of pork with oil; sprinkle with mustard powder. Preheat a char-grill to high. Add pork; cook for 2 minutes each side or until cooked to your liking. Brush with honey; cook for 30 seconds each side or until golden. Transfer to a heatproof plate. Cover with foil; rest for 5 minutes.
2.Combine capsicum, beans, corn and onion in a bowl. Whisk vinegar, oil, garlic and sugar in a jug. Pour vinegar mixture over capsicum mixture; toss to combine. Season. Serve pork with salsa.
You can use any type of canned beans. Balsamic vinegar also works well in this recipe.
