Grilled chicken burger with lime and coriander mayonnaise
1.Spray a char-grill or barbecue with oil. Preheat on high.
2.Season chicken breasts with salt and pepper to taste. Char-grill chicken and bacon for 3-4 minutes each side, until chicken is cooked through and bacon is crisp. Set aside and cover to keep warm.
3.Meanwhile, char-grill Turkish bread, on cut-side, for 1-2 minutes, until golden.
4.Place tomato and lettuce on bottom halves of bread. Top with grilled chicken, bacon and a dollop of mayonnaise. Top with remaining slice of Turkish bread.
Lime and Coriander Mayonnaise
5.In a small bowl, combine all ingredients. Season to taste.
Use bread rolls, if preferred. This can also be prepared with crumbed chicken schnitzels, but it would be best to pan fry these in a little olive oil.
