1.Cook pasta in salted boiling water according to packet instructions.
2.Meanwhile, melt spread in a large saucepan on medium. Add flour and cook, stirring, for 1 minute. Remove from heat. Blend in milk until smooth. Return to heat and cook, stirring, until sauce boils and thickens. Reduce heat to low and simmer for 3 minutes. Season to taste.
3.Add spinach, tomatoes, olives, onions and parsley to sauce. Heat, stirring, for 3-5 minutes. Mix cooked pasta, tasty cheese and parmesan through. Preheat grill to high.
4.Spoon equal amounts into 4 ovenproof gratin dishes. Sprinkle with an even amount of feta and oregano. Grill for 1-2 minutes, until cheese is golden. Serve with salad and crusty bread.
