Method

1.In a large bowl, combine mince, breadcrumbs, egg, rind, oregano and garlic. Season to taste. Roll mixture into 8 even-sized patties. Chill for 15 minutes.
2.TABOULI: Place burghul in a large bowl. Cover with cold water. Set aside for 10-15 minutes until most of the water has been absorbed. Drain off excess water. fluff with a fork. Toss through herbs, tomato and onion. Add oil and juice, mixing well. Chill until required.
3.Heat oil in a large frying pan on medium. Cook patties in batches, for 4-5 minutes each side, until browned and cooked through. Drain on paper towel.
4.Serve lamb patties with tabouli and Turkish bread.
