Method
1.Blanch gnocchi in a large saucepan of boiling water. Drain and refresh in iced water.
2.Heat half the butter in a large frying pan on high. Cook gnocchi for 3-4 minutes, stirring. Reduce heat to medium.
3.Heat remaining butter in pan and add the broccoli. Cook, stirring, for 4-5 minutes.
4.Add lemon juice and half the parmesan. Season to taste. Serve topped with remaining parmesan and with a lemon wedge on the side. If you like, you could also sprinkle over a little chopped parsley.
This is delicious if you drizzle on a little extra olive oil and lemon juice just before serving.
