Method

1.To make peanut sauce, heat peanut oil in a small saucepan on medium. Add ginger and chilli and sauté for 2 minutes. Stir in peanut butter and 2-3 tablespoons water and cook for 4 minutes. Stir in lime juice and sesame oil and season to taste. Set aside and keep warm.
2.In a large bowl, combine mince, ginger, chilli, coriander and soy sauce and season. Shape into 8 patties.
3.Preheat oven to 180°C. Line a baking tray with baking paper. Heat a large, non-stick frying pan on high. Cook patties for 3-4 minutes each side, until golden-brown. Transfer to prepared baking tray and bake for 8-10 minutes, until cooked through.
4.Arrange patties on heated plates with steamed rice. Serve topped with peanut sauce and extra coriander.
