Method
1.Spray a large heavy-based saucepan with cooking oil spray; heat on high.
2.Cook chicken 3 minutes each side, until lightly browned; remove from pan and set aside.
3.Add butter to pan; heat on medium. Cook onion 3 minutes, until soft.
4.Return chicken to pan with wine. Bring to boil; simmer 4 minutes, until wine evaporates. Add stock; simmer, covered, on low heat, 30 minutes, until chicken is cooked through.
5.Meanwhile, cook carrots in a saucepan of boiling, salted water 5 minutes, until just tender. Lift from water; drain.
6.Add broad beans to water; cook 3 minutes. Drain. Refresh beans and carrots in iced water. Drain, remove and discard white skin from beans.
7.Remove chicken from pan and keep warm. Stir vegetables, garlic and lemon juice into cooking liquid. Bring to boil; season to taste. Serve chicken with broad beans and carrots and sauce spooned over.
