Satay sauce
Method
1.In a bowl, combine kumara, beans, tomatoes and sprouts.
2.For the satay sauce: In a saucepan, combine peanut butter, kecap manis and chilli flakes. Stir over low heat until combined. Gradually add water, stirring, until smooth.
3.Spoon salad into lettuce cups and add eggs. Spoon sauce over, then season with pepper to serve.
Note
- To boil room-temperature eggs, lower into a saucepan of simmering water. Boil for 3-4 minutes for soft-boiled (5-6 minutes for hard). Remove, then rinse under cold water. For eggs from the fridge, cover with cold water, bring to the boil on high. Start timing eggs once water reaches boiling point.
