Fried rice salad

Fried rice is favourite with adults and children alike. This easy-cook version is great for school and work lunchboxes and picnics.

Ingredients

Method

1.Heat oil in a large frying pan or wok on high. Saute onion, capsicum and bacon for 3-4 minutes.
2.Add rice, corn, onion and sauces. Stir-fry for 2-3 minutes, mixing well. Transfer to a bowl to cool.
3.Spoon salad into boxes or sealed containers. Top with cherry tomatoes and coriander leaves, if liked. Keep chilled until ready to serve.

Fried rice is best made from leftover rice cooked the day before. You can use white rice, if you prefer.
