Method

1.Whisk egg whites, chives and 2 tablespoons cold water in a large bowl until frothy. Season with salt and pepper.
2.Heat a wok or large frying pan over high heat. Add 1/2 teaspoon of the oil. Swirl to coat surface. Add a quarter of the egg white mixture; swirl to coat base thinly. Cook for 1 minute or until just set. Remove omelette to a chopping board. Cover loosely with foil to keep warm. Repeat with remaining mixture.
3.Add remaining oil to wok. Heat over high heat. Add capsicum, zucchini and mushroom; stir-fry for 5 minutes or until tender. Add ginger, rice. prawns, pea mix and soy sauce; stir-fry for 2 minutes or until heated. Remove mixture from heat.
4.Combine oyster sauce and 1 tablespoon water in a small bowl. Place omelettes on serving plates. Top each with a quarter of the rice mixture. Fold in sides to form a parcel, then enclose filling. Drizzle with oyster sauce mixture. Serve sprinkled with onion.

Freeze leftover egg yolks or use to make curd. You will need to cook 1/2 cup long-grain rice.
