Method

1.In a wok or large frying pan, heat 1 tablespoon oil on high until very hot. Pour in eggs, swirling over base and sides. Cook 2-3 minutes, until just set. Slide onto a board, roll up and roughly chop.
2.Heat remaining oil in wok until very hot. Stir-fry bacon 2-3 minutes, until crispy and browned. Add corn and garlic. Stir-fry 1 minute.
3.Add rice to wok and stir, gently breaking up with spoon. Add peas, onion, soy and sesame oil. Stir-fry 3-4 minutes, until well combined and hot. Toss omelette through to serve.

To prepare rice for frying, cook 1 1/3 cups raw fire the day before and spread out on a tray to dry out overnight in the fridge. Just-cooked rice wiIl make gluggy fried rice.
