Ingredients

Method

1.Boil, steam or microwave carrot and zucchini, separately, until tender.
2.Meanwhile, score fish skin; season. Cook fish, skin-side down, in heated oiled large frying pan about 5 minutes. Turn fish; cook about 3 minutes. Remove from pan.
3. Add marinade and the water to same pan; stir until hot, season to taste.
4.Serve fish with vegetables and sauce.

We used snapper fillets for this recipe but you can use any white fish fillet you prefer.
