Method
1.Preheat oven to moderate, 180°C (160°C fan-forced).
2.Cut a cross on top of each fig; gently press at base to open slightly. Wrap a slice of prosciutto around each fig and place a little cheese in centre.
3.Melt butter in an ovenproof pan on medium heat. Remove from heat; stir in vinegar and sugar.
4.Place figs upright in pan, to fit snugly; bake 15 minutes, until cheese melts and figs soften slightly. Serve immediately.
