Fetta and bean stuffed mushrooms
1.Preheat oven to 220°C (200°C fan-forced). Place mushrooms, cup-side up, on a baking tray.
2.Combine beans, vegetables, onion, parsley, zest, feta and half the cheese in a large bowl. Divide bean mixture equally among mushrooms. Top with remaining cheese. Bake for 20 minutes or until mushrooms are tender and cheese melts.
3.Serve mushrooms with salad.
Use shredded cooked chicken breast instead of antipasto vegetables.
