Method
1.Place falafel on a microwave-safe plate. Microwave on High (100%) for 1 minute or until heated.
2.Meanwhile, place couscous in a heatproof bowl. Stir in 1 1/2 cups boiling water. Cover with plastic food wrap; set aside for 5 minutes or until liquid is absorbed. Using a fork, fluff couscous and separate grains. Add oil, chives, tabouli, juice and spinach; toss to combine. Season.
3.Stir heated falafel through couscous mixture. Serve topped with dip.
