Method

1.Preheat oven to hot, 200°C. Pour enough oil into a large frying pan to cover the base. Heat on medium and cook eggplant in 2 batches 2-3 minutes each side, until golden. Drain on paper towel.
2.Spread half the pasta sauce over the base of a large shallow baking dish. Arrange eggplant on top. Season to taste. Top with remaining pasta sauce and shredded pizza cheese.
3.Bake 10-15 minutes until cheese melts. Serve topped with basil leaves, if desired, and accompany with a salad and crusty bread.
