This healthy French-style seafood soup by Woman's Day is tasty and refreshing in a rich broth packed with beautiful fish and shellfish, accompanied with homemade garlic bread.
1.In a large saucepan, heat oil on low. Cook celery, onion and garlic 10 minutes, stirring, until translucent and tender.
2.Add fennel, chilli and saffron. Cook a further 4-5 minutes, stirring often, until fennel is just tender. Season to taste.
3.Pour in wine and bring to the boil on high; simmer until liquid reduces by half.
4.Stir in stock, tomatoes and thyme. Return to boil, then reduce heat to low; simmer 10 minutes.
5.To make cheat’s rouille, in a food processor combine aioli and capsicum. Pulse until smooth; season to taste.
6.Add fish to simmering soup, stirring once to combine. Simmer, covered, 3-4 minutes, until fish is just cooked through. Serve sprinkled with parsley. Accompany with rouille and fries.
