Method

1.Heat oil in a large frying pan on low. Add onions and garlic and cook, stirring, over low heat for 10-15 minutes, until onions are caramelised.
2.Mix in salt, chilli, paprika, cayenne and turmeric. Cook, stirring, 1 minute, or until fragrant.
3.Stir water and lime juice through. Simmer, covered, 3-4 minutes.
4.Add prawns, sugar and tomato paste. Simmer, uncovered, for a further 4-5 minutes, until sauce is thick enough to coat the prawns.
5.Sprinkle with coriander and serve with rice and pappadums.
