Method
1.Cook pasta in a saucepan of boiling salted water for 10 minutes or until tender. Drain; return to pan.
2.Meanwhile, heat a frying pan over high heat. Add chorizo and onion; cook and stir for 3 minutes or until golden. Add beans and garlic; cook and stir for 2 minutes or until almost soft. Remove pan from heat. Stir in vinegar, olive, tomato and reserved oil. Season.
3.Add chorizo mixture to pasta in pan; toss to combine. Stir in half the basil. Sprinkle with remaining basil. Serve with salad leaves.
Use salami or bacon instead of chorizo. Flavour will vary. Use any pasta shape, such as penne or rigatoni. Cooking time will vary. Vegetarian: Omit chorizo and add thickly sliced bought char-grilled kumara (orange sweet potato) and zucchini slices from the deli counter. Price will vary.
