Method

1.Heat oil in a large saucepan on medium. Saute onion, garlic and ginger for 6-8 minutes, until golden and tender. Add spices and chilli. Cook for 1 minute, until fragrant.
2.Stir in stock and lentils. Bring to the boil on high. Reduce heat to low. Simmer, stirring occasionally, for 35-40 minutes, until lentils soften. Season. Stir coriander through.
3.Combine all salad ingredients in a bowl. Serve dahi with salad, roti, and lime wedges, if desired.

For roti, combine 1 1/3 cups plain flour, 3/4 cup ghee and 1/3 cup warm water in a large bowl. Mix well and roll into 4 balls. Wrap in plastic and rest for 1 hour. Roll balls out to a circle about 0.5cm thick. Shallow fry in oil for 3-4 minutes each side, until golden. Drain on paper towel.
