Method

1.Heat a little oil in a large frying pan on high. Fry pork 3-4 minutes, turning, to seal well. Stir in curry powder; cook 1 minute, until fragrant.
2.Mix cream and mango chutney through. Bring to the boil, then reduce heat to medium. Simmer 1-2 minutes, stirring, until thickened.
3.Add broccolini; simmer 2-3 minutes, until just tender. Serve with extra chutney and pappadums or naan bread.

For tenderness, slice the pork across the grain – it is easier to slice if partially frozen.
