Method
1.Preheat grill to medium-low. Line a baking tray with baking paper.
2.In a bowl, combine breadcrumbs, mint, cheese and rind. Place fish on prepared tray and season to taste. Top with crumb mixture. Cook under grill 2 minutes, until fish is golden and cooked through.
3.Meanwhile, combine salad and mint leaves with tomato in a bowl. Drizzle with combined oil and lemon juice and season to taste. Toss gently. Serve fish with salad and lemon wedges.
Use barramundi, flathead or flounder fillets in place of whiting.
