Method

1.Place potatoes in a small microwave- safe bowl. Cover with water. Microwave on high (100%) power, for 4 minutes. Drain and cool. Grate potato.
2.In a medium bowl, combine eggs and rice flour. Add cod, potato, chives and lemon juice. Season to taste and mix well
3.Heat oil in a large frying pan on high. Drop 1/4 cupfuls of mixture into hot oil. flattening slightly. Cook for 3-4 minutes each side, until cooked through and crisp. Drain on paper towels. Serve with cream cheese and rocket.

Try this recipe using sweet potato instead of potato. These hash browns are delicious with at drizzle of sweet chilli sauce.
