Method

1.Preheat oven to 200°C. Arrange potatoes in a single layer in a baking dish. Brush with half the oil. Bake for 20-25 minutes until golden and tender.
2.Meanwhile, heat a non-slick frying pan with remaining oil. Sprinkle the skin of salmon with sat. Sear salmon, skin-side down, for 4-5 minutes or until skin is crispy. Turn over. Cook for 3-4 minutes until cooked to taste.
3.In a small bowl, combine tomatoes, capers, onion, avocado and juice. Season to taste.
4.Serve salmon, crispy side up, on a bed of potatoes. Top with tomato and caper salsa and dill.

To check whether fish is cooked, test it with a fork or the tip of a knife – the flesh will flake easily when the fish is ready.
