Method

1.Preheat oven to hot, 200°C. Line 2 oven trays with baking paper.
2.Arrange kumara in a single layer on one of the trays. Spray with oil. Bake for 30-35 minutes, until tender and golden.
3.Meanwhile, in a shallow dish, combine breadcrumbs and parmesan, and season to taste. Dip chicken strips into egg, then coat in crumb mixture, pressing onto chicken firmly.
4.Place in a single layer on prepared tray. Drizzle with oil. Bake for 15-20 minutes. until golden and cooked through.
5.Serve chicken with kumara chips and green salad.

Use potatoes if you don’t like kumara. Its a good idea to chill the coated chicken for 10-15 minutes before baking.
