Method

1.Heat oil in a large frying pan or barbecue plate on medium.
2.Cook fish, skin side down, 2-3 minutes, or until golden and crisp. Turn and cook for a further 3 minutes, until done to your liking. Season to taste. Squeeze lemon juice over cooked fish.
3.Meanwhile, for avocado salsa, toss together avocado, lime segments and coriander. Season to taste.
4.Serve fish straight from barbecue with salsa, oven-baked fries and lemon wedges.

To segment a lime, peel off the skin and remove any excess white pith. Then, using a small, sharp knife, slice along both sides of the membranes to remove segments – do this over a bowl to catch any juice.
