Method
1.Heat oil in a large saucepan on medium. Saute onions and ginger for 1-2 minutes.
2.Add chicken stock and water to pan. Bring to the boil on high. Break vermicelli in half and add to pan with choy sum.
3.Simmer for 4 minutes until noodles are tender. Stir in mushrooms, crab meat, fish sauce and soy sauce. Simmer for 1-2 minutes until heated through.
4.Ladle into serving bowls. Top with extra green onion and a little chopped chilli (optional). Serve with lime wedges.
If preferred, use fresh crab meat, available from the chilled seafood section of your supermarket.
