Method
1.Place kumara, corn, egg, parsley and chives in a bowl. Mix to combine. Add pepper to taste.
2.Form 1/4-cup measures into flat patties. Lightly dust with flour. Place on a tray lined with baking paper and chill for 10 minutes.
3.Heat oil in a large, non-stick frying pan on medium. Cook patties for 3 minutes each side, until golden. Serves with sauce of choice.
One medium kumara should be sufficient for this recipe. Ensure the kumara is well drained after cooking, as this will affect the consistency of the patty mixture.
