1.In a large bowl, combine corn, bacon, flour, parsley, green onions and egg. Season to taste.
2.Heat a non-stick frying pan on medium. Brush with olive oil. Place heaped tablespoonfuls of the mixture into pan in 3 batches, and flatten slightly with a spatula.
3.Cook for 1-2 minutes, each side, or until fritters are lightly browned and cooked through.
4.Transfer cooked fritters to a plate. Cover with foil to keep warm while cooking the remaining fritters. Serve with tomato relish and salad.
