1.In a large, deep frying pan, heat oil on medium. Cook onion 5-7 minutes, until very soft. Add ginger, garlic, chilli paste and ground cumin and stir 2 minutes, until fragrant.
2.Add pork, coconut milk and 1/3 cup water. Cover and simmer 20 minutes. Remove lid and simmer another 15 minutes, until pork is cooked through and sauce thickens slightly. Remove pork from pan and slice. Divide between serving plates and drizzle with coconut sauce. Serve with rice and coriander.
If you can’t find 500 gram fillets, use three smaller pieces and check them halfway through cooking, as they will cook faster.
