1.Fry bacon in a pan on high for 2-3 minutes each side, until crisp, Slice thinly and set aside.
2. In a small bowl, mash eggs and mayonnaise together. Season to taste.
3.Spread 4 slices bread with egg mixture and top evenly with lettuce and bacon. Cover with second bread slice. Spread avocado over top of bread, then cover with chicken and tomato. Finish with remaining bread.
4.Cut each sandwich into quarters using a serrated knife and secure with toothpicks.
These sandwiches can be made with toasted bread, and there are no limits to the fillings you can try.
Note
