Method
1.Preheat oven to 180°C. Line 2 oven trays with baking paper.
2.Brush one side of bread with oil, then sprinkle with mint and salt. Cut each piece into 8 wedges. Place on trays. Bake 5-10 minutes, until golden and crisp.
3.To make dressing, place all ingredients in food processor and process until smooth. Season to taste.
4.In a bowl, combine tomatoes, qukes, capsicum, olives and feta with dressing. Toss to coat and serve with lavash crisps.
