1.Preheat oven to moderate, 180°C. Line 2 oven trays with baking paper.
2.Brush one side of bread with oil, then sprinkle with mint and salt; cut each piece into 8 wedges. Place on prepared trays; bake 10 minutes, until golden and crisp.
3.To make the dressing, in a food processor, combine all ingredients; process until smooth. Season to taste.
4.In a large bowl, combine tomatoes, qukes, capsicum, olives and feta with dressing; toss to combine. Serve with lavosh crisps.
