Method

1.Preheat oven to 200°C/180°C fan-forced. Grease a 23cm (base measurement) round ovenproof pie dish.
2.Combine breadcrumbs with butter in a small bowl. Scatter mixture over base of prepared dish.
3.Heat a medium frying pan over moderately high heat. Add chorizo and onion; cook and stir for 2-3 minutes or until chorizo is crisp. Add vegetables; cook and stir for 2-3 minutes or until just tender. Spoon vegetable mixture into prepared dish.
4.Whisk eggs and cream in a medium jug; gently pour over vegetables in dish. Sprinkle with cheese. Bake for 20-25 minutes or until set. Remove from oven; stand for 5 minutes. Serve with salad.

This recipe is a great way to use up leftover vegetables.
