Method

1.Preheat oven to 220°C/200°C fan forced. Line a baking tray with baking paper. Place tomato on prepared tray. Drizzle with 2 teaspoons of the oil. Bake for 8-10 minutes or until softened slightly.
2.Meanwhile, cook chorizo in a large frying pan over moderate heat for 5 minutes or until crisp. Drain on paper towels. Add bread to pan; cook and stir for 2-3 minutes or until browned and crisp.
3.Combine lettuce, chorizo, olives and fetta in a large bowl. Drizzle with combined vinegar and remaining oil. Sprinkle with basil and parsley; toss to combine. Serve topped with bread.

Fresh chorizo sausages, from the meat section, are cheaper than dried. Chorizo is a spicy, Spanish-style pork sausage. It’s sold in supermarkets and delis. Use any type of bread.
