Method

1.In a large frying pan, heat butter and oil on high. Cook sausages 4-5 minutes, turning, until well browned. Transfer to a plate.
2.Saute onion in same pan 1-2 minutes, until tender. Add mushrooms and cook, stirring, 4-5 minutes. Stir in tomatoes and saute 2-3 minutes.
3.Return chipolatas to the pan and season to taste. Cook, stirring, 2-3 minutes. Toss spinach through. Heat 1 minute. Serve with thick toast or crusty bread.
