Method
1.Preheat oven to 180°C. Line a baking tray with foil.
2.Combine lemon juice, soy sauce, mustard, and honey and ginger spread in a large bowl. Add chicken pieces, turning to coat well. Chill for at least 30 minutes.
3.Heat oil in a frying pan on medium. Cook chicken for 1-2 minutes each side, until golden. Transfer to prepared baking tray. Bake for 5-10 minutes, until cooked through. Serve with salad and lime wedges on the side.
If honey and ginger spread is unavailable, use honey combined with 1/4 teaspoon ground or grated fresh ginger.
