1.In a large frying pan, heat oil over moderate heat. Add mince; cook, stirring with a wooden spoon to break up lumps, 5 minutes or until browned. Add capsicum, chilli and garlic; cook and stir 2 minutes. Add cumin; cook and stir 30 seconds or until fragrant.
2.Add tomato and salsa; bring to the boil. Reduce heat. Simmer, uncovered, 5 minutes or until thickened. Remove from heat; stir in coriander. Cool 10 minutes.
3.Spray one side of tortillas with oil. Place tortillas, oiled-side down, on a flat surface. Top 3 tortillas with mince mixture and cheese; top with remaining tortillas. Spray with oil. Preheat sandwich press over moderate heat. Toast 2-3 minutes or until tortillas are crisp and cheese melts. Cut into wedges. Serve at once with lime wedges and extra salsa.
