1.Cook noodles in a large saucepan of boiling, salted water according to packet directions. Drain, rinse under cold water and drain again. Place in a bowl with peanut oil and three-quarters of cucumber and capsicum. Toss to combine.
2.To make dressing, combine all ingredients and 1/3 cup water. Season with black pepper.
3.Add dressing to noodles and toss to combine. Serve topped with remaining cucumber and capsicum, and extra sesame seeds.
For extra punch, try adding 3 sliced green onions and a dash of chilli sauce to the dressing.
