Method

1.In a frying pan, heat butter on medium. Cook chicken in batches for 3-5 minutes, turning once, until golden. Remove and keep warm.
2.Add lemon rind and juice to pan with water, scraping base of pan. Cook until mixture has reduced by half. Stir in capers and parsley.
3.Return chicken to pan and cook for 1-2 minutes, until heated through. Season to taste. Serve.

For a thicker sauce, dust chicken tenderloins in a little seasoned flour.
